Sourcing and Processing Steps
Picking and Collecting
As the fruit ripens, it changes from green to red, and the seed inside develops from soft and white to hard and black indicating peak Thaumatin content. Once fully ripe, only the highest-quality fruit is carefully selected and foraged to ensure optimal yield and performance.

Transport to Process
The harvested fruit is transported from forest regions directly to village cutting stations. This journey is completed quickly to ensure the fruit remains fresh and at optimal ripeness.

Processing
Thaumatin is located within the aril — the soft, white fleshy layer surrounding the seed. At dedicated cutting stations, the arils are carefully removed and rapidly frozen on-site to preserve freshness and prevent contamination, ready for dispatch.

Transport to Natex UK
The frozen arils are transported in secure cold-storage containers directly to Natex’s on-site freezer facilities in the UK. They remain frozen under controlled conditions until the point of processing.
